Chow Mein


Turn an everyday Chinese dish like Chow Mein into a homemade favorite! Chow Mein has an easy to follow recipe that allows you to make variations with ease. This recipe serves 4 to 6.

You will need:
  • 8 ounces thin spaghetti
  • 4 teaspoons olive oil
  • 1 small onion, thinly sliced
  • 1 1/2 teaspoons minced garlic
  • 1/4 teaspoon ground ginger
  • 1 1/2 teaspoons Five Spice Powder
  • 1/3 cup broccoli florets
  • 1/4 cup carrots, sliced
  • 1/4 cup snap peas
  • 1/4 cup sliced Shiitake mushrooms
  • 2 cups chicken, cooked and diced
  • 1/2 - 1 cup chicken stock
  • 1 tablespoon soy sauce

Preparation

  1. Bring pot of water to boil and cook noodles for 8 to 10 minutes or until al dente. Drain and set noodles aside.

  2. While noodles are boiling, heat 2 teaspoons olive oil in large skillet and add sliced onions and minced garlic. Sauté 1 to 2 minutes.

  3. In same skillet, add ground ginger, Five Spice powder, broccoli florets, sliced carrots, snap peas and sliced Shiitake mushrooms. Sauté 3 to 4 more minutes.

  4. Add noodles, continuing to stir until well blended.

  5. Add chicken stock and diced chicken. Stir constantly for 2 to 3 minutes over medium heat.

  6. Remove from heat. Stir in soy sauce, and serve.

Variations

  • Substitute 2 cups cooked, cleaned shrimp or cooked slices of pork for diced chicken.
  • For spice, add chili flakes to taste.
  • Add your favorite vegetables, like shredded cabbage, during Step 3.
  • Garnish with sesame seeds.
  • Flavor to taste with soy sauce.
