Dan Dan Noodle Soup

You will need:
  • 8 ounces thin spaghetti noodles
  • 3 tablespoons sesame paste
  • 1 tablespoon sesame oil
  • 1/2 cup raw peanuts
  • 1/3 cup peanut oil
  • 1 tablespoon minced garlic
  • 1/4 inch slice fresh, clean ginger
  • 3 tablespoons soy sauce
  • 1 cup chicken stock
  • 3 teaspoons hot chili oil
  • 1 tablespoon sugar
  • 1 teaspoon Szechuan peppercorn (adds quite a bit of spice to dish – add slowly to taste)
  • 1/3 cup diced green onions for garnish

Preparation

  1. Cook noodles according to directions of package. Drain and set aside.

  2. In small mixing bowl, combine sesame paste and sesame oil. Whisk well.

  3. In skillet, add peanut oil and raw peanuts. Fry peanuts until golden brown, approximately 8 to 10 minutes. Set aside to cool.

  4. When cooled, transfer peanuts and peanut oil to food processor and blend.

  5. Add minced garlic, ginger slice, and sugar. Blend until minced.

  7. Add soy sauce, chili oil, Szechuan peppercorn and chicken stock. Continue blending until completely mixed.

  8. Place noodles and sauce in large pot on medium heat. Heat until warm.

  9. Garnish with green onions and serve.

Variations

  • Substitute chili flakes or your favorite chili seasoning for Szechuan peppercorn. Add to taste.
  • Add freshly squeezed lemon juice to taste.
  • For heartier meal, garnish with cooked pork, chicken or tofu pieces.
  • For vegetarian Dan Dan Noodles, substitute vegetarian stock for chicken stock.
  • Garnish with cilantro leaves.
  • Garnish with Birdseye chili slices.
