Bamboo Shoot Soup

Ingredients

You will need:
  • 4 cups vegetarian based stock
  • 3 tablespoons peanut oil
  • 1 cup sliced mushrooms
  • 2 teaspoons ground ginger
  • 1 teaspoon ground white pepper
  • 2 cups bamboo shoots, sliced

Preparation

  1. Place vegetarian stock into saucepan, and bring to boil.

  2. While stock is coming to boil, heat peanut oil in skillet and add mushrooms. Sauté 5 minutes or until tender.

  3. When stock is at full boil, add sautéed mushrooms, ginger, white pepper, and sliced bamboo shoots. Let simmer 2 to 3 minutes. Serve immediately.

Variations

  • Substitute fresh shiitake or straw mushrooms for button mushrooms, or use a combination of them all.
  • Add finely chopped carrots to stock during step 1.
  • For spice, add chili flakes to taste.
  • For heartier meal, add cooked noodles.
  • Garnish with green onions.
  • Flavor to taste with soy sauce.
