Congee Rice


One can never go wrong when making Congee Rice. Prepare Congee Rice creamy and thick like porridge, slightly watery for a soup texture or sweet for a dessert or breakfast dish. Simply put, Congee rice equals comfort! This recipe serves 4 to 6.

You will need:
  • 1 cup long grain white rice
  • 8 cups water

Preparation

  1. Place rice and water in large pot, and bring to rolling boil.

  2. When water comes to a boil, cover pot, making sure steam is allowed to escape either by using a vented lid or by tilting the lid.

  3. Reduce heat to medium low, and cook rice for up to an hour and a half.

  4. Stir occasionally. The desired result is a creamy porridge like consistency.

  5. *Preparation Tip: This is a basic recipe for congee rice. You can add many different items to congee for your specific tastes, such as fresh fish, sliced cooked pork, chilies, ginger, coriander, green onions, or soy sauce, to give it your own flavor. You can also make a sweet version of congee by adding Chinese dates (jujubes) and bit of rock or Palm sugar to taste during Step 3, and topping with sugar and cinnamon before serving.
