Bamboo Shoot Soup

Ingredients

You will need:
  • 4 cups homemade chicken stock
  • 3 tablespoons peanut oil
  • 1 cup sliced mushrooms
  • 2 teaspoons ground ginger
  • 1 teaspoon ground white pepper
  • 2 cups bamboo shoots, sliced

Preparation

  1. Place chicken stock into saucepan, and bring to boil.

  2. While broth is coming to boil, heat peanut oil in skillet and add mushrooms. Sauté 5 minutes or until tender.

  3. When broth is at full boil, add sautéed mushrooms, ginger, white pepper, and sliced bamboo shoots. Let simmer 2 to 3 minutes. Serve immediately.

Variations

  • Substitute canned chicken broth for homemade chicken stock.
  • Substitute fresh shiitake or straw mushrooms for button mushrooms, or use a combination of them all.
  • Add finely chopped carrots to stock during step 1.
  • Add 1 cup large whole uncooked shrimp (cleaned and peeled) during Step 3. Shrimp will appear pinkish when cooked thoroughly.
  • For spice, add chili flakes to taste.
  • For heartier meal, add cooked noodles.
  • For vegetarian soup, substitute vegetarian based broth for chicken stock.
  • Garnish with green onions.
  • Flavor to taste with soy sauce.
