Mangoes with Sticky Rice

Mangoes with Sticky Rice is a simple yet delicious dessert that even the most culinary challenged can master with ease.

You will need:
  • 1 cup sticky rice (or sweet rice)
  • 1 ½ cups water
  • 2 mangoes, ripe and cut into 1 inch pieces (frozen mango can be substituted)
  • ¼ c and 1 Tbsp brown sugar
  • 12 oz coconut milk
  • 1 tsp vanilla
  • 1 tsp coconut flavoring

Preparation

  1. Prepare rice by soaking in one cup of water for 20-40 minutes. Do not drain rice.

  2. Add rice to medium size pot. Add 1 cup more water, as well as 3 ounces coconut milk, coconut flavor and 1 tablespoon brown sugar. Mix well into rice, and bring to low boil.

  4. Reduce heat and cover partially, venting lid to let steam out. Simmer for about 20 minutes or until all liquid is absorbed.

  5. Remove from heat, readjust lid to fit tightly on pot, and let sit for 8-10 minutes.

  6. While rice is sitting, in a small saucepan, combine remaining coconut milk, brown sugar and vanilla. Let warm over medium heat for 4 – 6 minutes. Remove from heat.

  7. To serve, place one scoop rice in bowl, pour sauce over and add mango pieces to top of the rice.
