Moon Cakes

Moon Cakes are traditionally served during the Mid-Autumn Festival but have gained popularity and can be served throughout the year as a special gift to dinner guests.

Ingredients

You will need:
  • 2 egg yolks
  • ¼ c white sugar
  • ½ c butter, salted
  • 1 c flour, all purpose
  • 1 c strawberry jam (red bean paste can be substituted for a more traditional taste

Preparation

  1. In medium mixing bowl, place butter, sugar, and one egg yolk. Mix well.

  2. Stir in flour to create dough. Shape dough into large ball and wrap in plastic wrap. Let refrigerate for a half hour.

  3. After dough has chilled, unwrap and form small balls from large dough ball.

  4. In each ball, make a hole with your thumb and fill with ½ teaspoon of jam or red bean paste.

  5. Brush each moon cake with the reserved beaten egg yolk and place on a cookie sheet.

  6. Bake at 375 F for 15-20 minutes or until edges are brown.
