Hot and Sour Soup


Add spice to your life on a rainy day by making Hot and Sour Soup to warm you up! Hot and Sour Soup can be made a variety of ways by changing simple ingredients or adding your own flare! This recipe serves 4.

You will need:
  • 4 cups low-salt chicken broth
  • 3 tablespoons soy sauce
  • 1/4 cup thinly sliced pork
  • 1/2 cup diced mushrooms
  • 1/2 tablespoon minced garlic
  • 1/3 cup thinly sliced bamboo shoots
  • 1/4 teaspoon white pepper
  • 3 ounces diced tofu
  • 1/4 cup white vinegar
  • 2 beaten eggs
  • 1 Birdseye chili sliced length wise or diced

Preparation

  1. In a 2 quart saucepan, add homemade chicken stock, soy sauce, cooked pork, mushrooms, and garlic. Bring to simmer and let continue simmering for five minutes.

  2. Add bamboo shoots, white pepper, tofu, and vinegar. Optional: Add half Birdseye chili to taste, and save remaining half for garnish. Let simmer for another five minutes.

  3. Slowly add beaten eggs to soup, stirring in same direction several times to let egg cook.

  4. Remove from heat, garnish with remaining Birdseye chili and serve immediately.

Variations

  • Substitute canned chicken broth for homemade chicken stock.
  • Substitute 1/2 cup uncooked peeled, deveined shrimp halved lengthwise for pork. Add during step 2.
  • Substitute chili flakes or your favorite chili seasoning for Birdseye chili. Add to taste.
  • Add freshly squeezed lemon juice to taste.
  • For heartier meal, add cooked noodles.
  • For vegetarian soup, do not add pork.
  • Garnish with cilantro leaves.
  • Disregard beaten egg.
