Almond Chicken

Chinese Almond Chicken is a flavorful dish that can easily become a household favorite.


You will need:
  • 3 lbs boneless, skinless chicken, diced
  • 3 Tbsp soy sauce
  • 1 cup almonds
  • 2 tsp rice wine
  • 2 cups peanut oil
  • ¾ tsp salt
  • 4 oz bamboo shoots, thinly sliced
  • 4 oz sliced mushrooms
  • 2 oz water chestnuts, thinly sliced
  • 1/3 cup chicken stock
  • 1 small onion, thinly sliced


  1. In large bowl combine soy sauce, rice wine, and salt. Add chicken. Stir to coat, cover and chill.

  2. In a large skillet or wok, heat 1 ½ cups peanut oil and fry almonds for 1 to 2 minutes, until golden. Remove almonds from oil and drain on paper towel.

  3. Remove oil from skillet, leaving 3 tablespoons in. Place mushrooms, onion, bamboo shoots, and water chestnuts. Let cook 1 to 2 minutes. Remove from skillet and set aside.

  5. Heat 1/4 cup peanut oil in skillet and place marinated chicken in skillet. Cook until proper temperature is reached and chicken is no longer pink.

  6. Add chicken stock, cooked vegetables, and sauce mixture. Bring to simmer and let cook 2 to 3 minutes. Remove from heat, add almonds and serve.
