Chinese Chicken Salad

For the dressing, you will need:
  • 1/3 cup sesame oil
  • 3 tablespoons white sugar
  • 3 tablespoons vinegar
  • 1/4 teaspoons salt

To prepare salad, you will need:
  • 8 ounces chicken, cooked and diced
  • 8 ounces water chestnuts
  • 4 green onions, chopped
  • 1 small can (approximately 11 ounces) mandarin oranges in water, drained
  • 6 ounces chow mien noodles
  • 1 bowl mixed greens–preferably romaine, baby spinach, arugula and/or mache lettuce
  • Sesame seeds for garnish

Preparation

  1. To prepare dressing, use small bowl to combine olive oil, sugar, vinegar, and salt. Mix well, and set aside to chill.

  2. In large serving bowl, combine mixed greens, chopped green onion, mandarin slices, diced chicken and water chestnuts. Mix gently.

  3. Toss lightly with dressing.

  4. Top with chow mien noodles, garnish with sesame seeds and serve.

Variations

  • Substitute 1 head lettuce, coarsely chopped for mixed greens.
  • Garnish with black sesame seeds.
