  • ¼ tsp baking soda

For the sauce, you will need:
  • 1 ½ cup chicken broth
  • 1 cup granulated sugar
  • 2 Tbsp soy sauce
  • 1 tsp chili paste
  • 1 tsp minced garlic
  • ½ cup water
  • 1/3 cup cornstarch

For the chicken preparation, you will need:
  • 1 quart peanut oil
  • 2 Tbsp sesame seed, toasted

Marinade Preparation

  1. In a medium bowl, combine flour, cornstarch, baking soda and powder.

  2. Mix well, and add soy sauce, rice wine, vegetable oil, sesame oil and two tablespoons of water.

  3. Stir until mixed well and smooth.

  4. Add chicken pieces, and stir to coat, cover and place in refrigerator for 20 to 30 minutes.

Sauce Preparation

  1. While chicken is in refrigerator, get a medium size saucepan.

  2. Over high heat, add sugar, soy sauce, sesame oil, chile paste, garlic and chicken broth to a boil.

  3. Dissolve the 1/3 cup cornstarch into ½ cup water and add to boiling sauce.

  4. Simmer for 2 to 3 minutes or until thickened.

  5. Reduce heat to low, keep at simmer to ensure sauce stays warm.

  6. In a deep fryer or large saucepan, heat peanut oil to 375 degrees.

Final Preparation

  1. Remove chicken from refrigerator, and drop into oil, a few pieces at a time, cooking until they are floating and golden brown, about 4 to 5 minutes.

  2. Remove from oil and drain.

  3. When all chicken is cooked through, place on a serving platter and pour warm sauce over.

  4. Sprinkle with sesame seeds and serve.
