Bamboo Shoot Soup

Bamboo Shoot Soup is a Chinese soup that is chicken stock-based. Bamboo Shoot Soup is simple and helps create a whole-hearted and relaxing meal that will warm you up on any cold day! This recipe serves 4.



You will need:
  • 4 cups vegetarian based stock
  • 3 tablespoons peanut oil
  • 1 cup sliced mushrooms
  • 2 teaspoons ground ginger
  • 1 teaspoon ground white pepper
  • 2 cups bamboo shoots, sliced


  1. Place vegetarian stock into saucepan, and bring to boil.

  2. While stock is coming to boil, heat peanut oil in skillet and add mushrooms. Sauté 5 minutes or until tender.

  3. When stock is at full boil, add sautéed mushrooms, ginger, white pepper, and sliced bamboo shoots. Let simmer 2 to 3 minutes. Serve immediately.


  • Substitute fresh shiitake or straw mushrooms for button mushrooms, or use a combination of them all.
  • Add finely chopped carrots to stock during step 1.
  • For spice, add chili flakes to taste.
  • For heartier meal, add cooked noodles.
  • Garnish with green onions.
  • Flavor to taste with soy sauce.
