Bamboo with Cucumber

Bamboo with Cucumber is an easy to prepare flavorful meal.


You will need:
  • 8 oz cucumber, sliced
  • 6 oz broccoli, coarsely chopped
  • 6 oz mushrooms, sliced
  • 3 oz carrots, sliced
  • 3 tsp minced garlic
  • 1 tsp soy sauce
  • 1 cup vegetable stock
  • 2 Tbsp water
  • 1 tsp cornstarch
  • 3-4 tsp olive oil



  1. In a small bowl, dissolve cornstarch into water and set aside.

  2. In a large skillet, add oil and heat over medium.

  3. Add garlic and cook for one minute.

  4. Add remaining vegetables and cook for 4 to 5 minutes longer, stirring frequently.

  5. Add vegetable stock, soy sauce, and cornstarch mixture, cover, reduce heat to low, and let simmer for about 10 minutes.

  6. Remove from heat and serve.
