Chinese Wok Asparagus with Cashews

Stir fry fresh asparagus and top with cashews.

This simple Chinese Wok Asparagus with Cashews recipe is quick to prepare and combines asparagus with cashews (or other nuts) for a delicious side dish your family will enjoy with any meal.

You will need:
  • 1 1/3 lb asparagus
  • 2 tbsp olive oil
  • 2 1/4 tsp sesame oil
  • ½ cup roasted cashews coarsely chopped
  • 1 tbsp ginger root, fresh-finely chopped
  • 1 tbsp soy sauce (regular or low sodium)

Preparation

  1. Cut of bottom of stems of asparagus (about ½ inch) and discard. Cut remaining stalk into 3 or 4 pieces with a diagonal cut.

  2. Heat oils together in a wok (high heat).

  3. Add in the ginger and stir fry for about a minute.

  4. Add the asparagus and stir fry until just tender. 4 ½ to 5 ½ minutes.

  5. Stir in the soy sauce and cashews and serve right away.

  6. Tastes great alone and works well over white rice or brown rice.

Variations

  • Use a heavy skillet if you do not have a wok
  • Substitute peanuts or almonds for the cashews
