Sweet and Sour Noodles


Sweet and Sour Noodles is a great dish all year around! For those who love tofu, Sweet and Sour Noodles has a perfect tangy blend that compliments sauté or deep fried tofu pieces deliciously! This recipe serves 4.

You will need:
  • 16 ounces thin Chinese egg noodles
  • 2 tablespoons vegetable oil
  • 3 green onions, diced
  • 1 small package extra firm tofu, completely drained, squeezed and cubed
  • 1 cup diced bell pepper
  • 1/4 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 3 tablespoons lemon juice
  • 3 tablespoons soy sauce
  • 1 tablespoon white sugar
  • 3/4 cup snow peas
  • 1 cup bean sprouts

Preparation

  1. In large pot, bring water to boil and cook noodles until al dente. Drain noodles and set aside.

  2. In large skillet, heat vegetable oil over medium heat. Sauté green onions 1 to 2 minutes.

  3. Add tofu pieces, diced bell pepper, ginger and garlic to skillet. Continue sautéing until tofu is slightly crispy.

  4. While tofu is cooking, combine lemon juice, soy sauce, and sugar in small bowl to make sauce. Mix well, and set aside.

  6. Add peas and bean sprouts to skillet with tofu. Continue heating 1 to 2 minutes to warm and blend vegetables and chicken.

  7. Add reserved sauce to skillet, and toss gently. Remove from heat, and serve.

Variations

  • For spice, add crushed red peppers to taste.
  • Garnish with chopped green onions.
  • Garnish with sesame seeds.
