Vegetable Chop Suey

This variation on traditional Chop Suey contains no meat but plenty of flavor.


You will need:
  • 2 cups celery, diagonally sliced
  • 2 cups carrots, diagonally sliced
  • 2 green peppers, thinly sliced
  • 6 oz mushrooms, fresh and sliced
  • 5 oz bamboo shoots, sliced
  • 5 oz water chestnuts, sliced
  • 2 cups vegetable stock
  • 3 Tbsp soy sauce
  • 3 Tbsp cornstarch
  • 3 Tbsp water
  • Olive oil



  1. Dissolve cornstarch in water.

  2. In a large skillet or wok, place a few tablespoons of olive oil, and heat on medium high heat. Place celery, carrots, peppers, and mushrooms in skillet and stir fry for 5 to 6 minutes.

  3. Add remaining ingredients, including water and cornstarch mixture, and let thicken for a few minutes before removing from heat and serving.
